These are actually probably my favorite cookies. They are similar to your typical Oatmeal Raisin but with dried cranberries and they're BIG. I know there are a lot of recipes already out there for this, but this one is my wife's recipe. Hope you enjoy these as much as I do.
BIG Cranberry Oatmeal Cookies
Ingredients:
1 1/4 cups butter (softened)
1 cup packed dark brown Muscovado sugar
1 cup raw sugar
3/4 tsp Sea Salt
1 1/2 tsp Vanilla extract
1 Egg (Large)
1 1/2 cups all-purpose flour
3 cups rolled oats (not the instant kind)
2 tsp Baking Soda
1 cup Dried Cranberries
1. Preheat oven to 325°F
2. In a large mixing bowl beat butter, sugar (both), salt and vanilla extract for 30 seconds, add egg and beat at a medium speed until mixed and fluffy.
3. Stir in oats, flour, and baking soda with a wooden spoon and mix until combined. Add cranberries and stir until mixed in as well.
4. Form dough into rounded, 3 inch wide, 3/4 inch thick forms (see picture below) and place on baking sheet 3 inches apart. Bake for 14-17 minutes until golden brown.
